Fermentation starters

Combining specific technological properties (acidification, texturization, bioprotective activity) with demonstrated probiotic effects, our bacterial strains can be used as fermentation starters for the production of unique, health-supportive dairy products or plant-based fermented food.

Functional food products

Our R&D programs explore the proteolytic capacity of lactic acid bacteria, and their capacity to generate bioactive peptides from milk proteins. Milk peptides for bone health, cardiovascular health, inflammation are being characterized. Selected lactic acid bacteria will be used as functional starters for the production of yogurts, cheese, milk-based drinks with specific health-promoting properties.

Biopreservation

Lactic acid bacteria that produce antimicrobial, antifungal, or natural antioxidant molecules offer a natural, safe, and effective alternative to synthetic preservatives in food. Our proprietary, selected strains are used in biopreservation strategies to develop clean-label fermented food products.

Our worldwide collaboration network gives us access to unique bacterial isolates from various sources and geographical origins : fermented dairy products from cow, horse, goat, camel milks, or fermented vegetable products.
